Our lambs enjoy grazing the diverse grasses and herbs in our pastures slowly growing. At one year old they become Hogget. Hogget has more flavour than Lamb. Small Hogget cuts like chops can be grilled like Lamb, but the joints are better slow roasted. At two years old they become mutton. Mutton has the best of all flavours, it is darker in colour, has a generous fat content and should be slow cooked either as a roast or a stew.

Customer Testimonials

"I recently purchased a rolled shoulder of hogget from this farm. It was an excellent joint and very generous size for the money. When slow cooked over 4 hours it produced a superb meal with wonderful flavour." R Clark
